Technical Documentation

Background science for the work on this site, one topic per page: funk development, cooked-fruit chemistry, acids, and whatever comes next.

How these pages are made

Each page starts as a research question. I work through the topic with AI help: reading the literature, arguing with the answers and checking the arithmetic, until I am satisfied the picture is sound and useful in practice. Only then do I have a summary document written from that research. That summary is what gets published here.

So these pages are settled notes rather than work in progress, but they are still a homebrewer's reading of the literature, not peer-reviewed work. Load-bearing claims carry a confidence tag (High / Med / Low); treat Low as "verify before acting". A page is revised, with a new version number, when the research moves on.

The calculators that turn these notes into working arithmetic live in Calculators.

Topics

  • Lambic Fundamentals: Nine linked pages on lambic and blended lambic: succession and chemistry, precursors, protocols, ingredients, blending and the empirical record.
  • Cooked Fruit Fundamentals: Mechanism, controls, flavour axes, stage architecture, beer-side accounting and hazards of cooked (Maillard) fruit preparations for mixed-fermentation beer.
  • Skills: The ingredient skills: the ingredient-studio router, how to call it, its routes and checks, and every specialist and mode behind it.
