Organisms¶

Banked and noted organisms, one table per type: Saccharomyces, Brettanomyces, bacteria and mixed cultures. What is held right now is in the bank inventory.

• Saccharomyces: Saccharomyces yeasts, isolated from bottles or banked from commercial strains.
• Brettanomyces: Brettanomyces yeasts, isolated from bottles or banked from commercial strains.
• Bacteria: Lactic acid and other bacteria, isolated or banked.
• Mixed cultures: Mixed cultures kept as tubes, ready to pitch, regrow or re-isolate.
