Banked. The Brett from Saison Provision, Burning Sky Saison Provision - Brett, is held as two slants but has not been used yet; when it is, check it thoroughly for Saccharomyces and bacteria first. The house Saison yeast came from cans of Saison Houblon instead and is banked as Burning Sky Saison Houblon - Sacch.

I got this beer along with an ingredients order after watching a very nice YouTube interview with the brewery's founder. In the interview he talks about how versatile his Saison yeast is, and at that point the only phenolic yeast I had in the bank was a Saccharomyces isolated from the Wy3278 lambic blend (Wy3278 Lambic Blend - Sacch). I bought a bottle of Saison Provision and a couple of cans of Saison Houblon, intending to try the Saison yeast and get an idea where mixed fermentation would take a Saison base made with Burning Sky's house strain.

I decided to get the Saison yeast from the Houblon cans and to plate Provision to check it out. There is no separate journey for Houblon: it is not a mixed-culture beer, and it was very straightforward (see Saison Houblon: the Saison yeast).

What else was in the bottle

The Provision plates showed a Saccharomyces (presumed to be the Saison strain), Brett with colonies of a single morphology and lacto colonies.

Saison Provision: the Brett

I decided that I wanted the Bretts in Provision, thinking the strain, if subtle and restrained, may have a use in the brewery. I also decided I was not interested in the lacto, as I felt it was too "feeble". In retrospect, I don't think this was a strong argument.

I plated from diluted dregs, and two of the plates were sufficiently spread to pick sacch, brett and lacto colonies with ease.

The shortcut

I did not follow protocol and arrogantly went directly from the mixed plate to slant, only to find a something growing in one of the slants. I discarded this slant, and only at that point decided to make a clean Brett plate before banking again.

Although I did end up banking from a clean plate, I remember it was all done a bit in a hurry.

Saison Houblon: the Saison yeast

Super straightforward. The plates came clean directly from the cans, and when fermented as a mini-beer it was clear this was the Saison yeast. Plating conditions and mini-beer details were not recorded.
