General Notes

Banked as a single mixed Brett culture, possibly two strains (shiny and dull colony types, recombined): two slants, prepared 2026-03. Stock is tracked in the bank inventory. The pineapple character I was after has not appeared in any mini-beer so far; parked for now.

Isolated from a bottle of Shrinebuilder, Holy Goat Brewing, over several plating and confirmation rounds on wort agar. The full story is in the journey.

  • Test tubes: promising; the tube "beer" smelled faintly of tropical fruit.
  • Mini-beer, ~22 °C: 200 mL in a 250 mL Erlenmeyer, 20 g DME, water < 50 mg/L alkalinity, ambient temperature, 4 weeks. A total fail: typical phenolic notes, no tropical notes.
  • Mini-beer, 30 °C: same wort composition, 2 weeks. No tropical notes.
  • Different alkalinity levels and temperatures up to 30 °C: no pineapple.
  • Shiny and dull colony types gave no perceivable difference in flavour, aroma or colour in test-tube beer.

Morphology

Colonies: tiny and smooth on wort agar at ~21 °C, barely visible to the naked eye after 2+ weeks. Two colony appearances on confirmation plates, shiny and dull; no difference seen under the microscope.

Microscopy

Small elongated and ogival yeast cells, many budding in pairs or short chains, 1000x oil immersion, phase contrast Brett isolate · 1000x oil immersion, phase contrast, no stain
