Cantillon Rosé de Gambrinus - Brett

General Notes

Banked as a single Brett culture: two slants and one slurry tube (prepared 2025-08). Stock is tracked in the bank inventory.

Isolated from a bottle of Rosé de Gambrinus, Cantillon, a subtle raspberry lambic. Only Brett and lacto grew on the first plate from the dregs; Brett colonies were picked and taken straight to slant. The full story is in the journey.

  • Two Brett types: one colony type, slow-growing, looked like Saccharomyces on the plate but appeared to be Brett under the microscope. It behaved and looked like Brett, so Brett it is for me (presumptive).
  • Tiny and Long: kept as two cultures, Cantillon Tiny Brett and Cantillon Long Brett, for a while, then recently mixed together for simplicity (date not recorded).

Morphology

Colonies: on wort agar at ~21 °C (days not recorded). One colony type was slow-growing and was first taken for Saccharomyces.

Cells: two cell types. Long: long cylindrical cells, some in short chains. Tiny: small oval to ogival cells, some budding (from the photos).
