General Notes

I call this yeast WBC Brut, named after a beer I brew with it. It is a good performer and I use it often.

Banked: two slants and one slurry tube (prepared 2026-02). Stock is tracked in the bank inventory.

It comes from a bottle of Rooting Around, The Wild Beer Co. That beer was my first taste of the wild funk and it started the whole story. I was convinced a Brett in it was responsible for all the wonders, and getting it took from 2018 to 2022. A hop-tolerant lacto in the same bottle (WBC Rooting Around - Lacto) took over every attempt, and the Saccharomyces was lost on the way. The full story is in the journey.
