General Notes

Pitched from a White Labs WLP648 PurePitch pouch, bought hoping for tropical notes or to complement a tropical base beer. Primary fermentation at 29-30°C was clean and well-behaved: the beer came out fairly neutral with some phenolic notes, rather than strongly tropical. A good primary fermenter. Two slants and one slurry tube are now banked; no colonies picked or isolate testing planned.

WLP648 Brettanomyces bruxellensis "Trois Vrai", White Labs, PurePitch Next Generation pouch. Batch or best-before not recorded. Bought as a pure commercial culture, hoping it would contribute tropical notes or complement a tropical base beer; background on the strain is in Technical notes below.

Technical notes

White Labs' own description: "a robust, complex sour character with aromas of pear", low flocculation, 8–12% alcohol tolerance, a fermentation range of 70–85°F (21–30°C), and it is recommended for primary fermentations for its high attenuation ability. Suggested styles are Lambic and Wild Specialty Beer.1

Note that White Labs doesn't list this strain for tropical character; its own descriptors are pear and a "robust, complex sour" profile. The clean, mildly phenolic, non-tropical result seen here is closer to the strain's stated profile than to the tropical hope it was bought for, which is worth factoring in before pitching it again for that purpose.
